Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. After our welcome we’ll offer you a no alcoholic drink with fresh fruit if you prefer and you will also enjoy our pool waiting for the beginning. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Obviously water, beer and wine are included. My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette. If you love to eat and cook come and join me in the SudKitchen Laboratory. In a professional but informal atmosphere I will personally guide you to discover the secrets of the perfect pasta dish. I will teach you how to make many types of homemade pasta in a real kitchen workshop. We will make dough with egg, semolina and water and colored dough with vegetables. You will learn the cutting techniques and we will make sauces to accompany our pastas. At the end of the experience we will cook all the pasta and sauces made during the lesson and we will eat them with excellent wine and a selection of typical cold cuts and cheeses, artisanal and organic.

Wine, vineyard and food experience with arranged transfer
Imagine an evening of walking through the beauty of Puglia and its vineyards, tasting its wines and unique flavors. Don't forget to enrich the experience with local culture and curiosities about the wine and vineyards. We meet at the Fasano train station, from there through our organized transfer that will bring you in our family farm, in the Martina Franca countryside, in the heart of Valle d 'Itria (departure from Fasano train station at 17.45). In our farm we will start our Wine Experience: we will walk through our vineyards and tell you about their history, cultivation techniques, information about grape varieties and our terroir. Directly in the vineyard overlooking the valley or in our taverna-cantina we will taste 4 wines from our farm Trulli il Castaño. We will accompany every wine with a typical homemade appetizer for a light dinner. We will guide you through the tasting with many curiosities about the wines and their history, winemaking techniques and the territory. No shortage of magical landscapes, memorable sunsets, and good company. At 21.00 about the transfer service will wait you in the property to bring you back safely at Fasano train station by 21.40.
Otranto Kayak Adventure
Kayaking to discover the Costa di Otranto along the Rotta dei Turchi, paddling between hidden coves and sea caves. We will explore Grotta Monaca Marine Cave, with its natural tunnels dug into the rock, the fantastic stalactites and white stalagmites. We will visit the Grotta del'Eremita Cave and Grotta Sfondata marine cave. We will disembark in the enchanting bay that guards the Mulino d'Acqua Beach, where we will take a swim break and Snorkeling. We will jump in the water in the Baia dei Turchi natural pool, explore caves and canals carved into the rock from springs that lead to the sea, we will explore a wonderful and wild coast. In this magical place we will take a swimming session and guided Snorkeling tour to admire the incredible marine biodiversity. We will disembark in the enchanting Baia dei Turchi, where we will explore this fantastic bay and the pinewood with its characteristic nature trails. We will paddling along the coast between natural pools and wonderful bays and we will return to Otranto to the meeting point and boarding where the excursion will end. Polignano by boat: cliffs and sea caves!
A fantastic and unforgettable boat trip to discover the breathtaking sea caves and the famous cliff of Polignano a Mare, visiting the whole coastline from North-West to South-East, enjoying especially the view of the sea cave with a restaurant inside "Grotta Palazzese", the islet "Scoglio dell'Eremita" and the beautiful sea cave "Grotta Stampagnata". A unique informal experience taking about 1 hour, with an experienced driver-guide, who will reveal some secrets and legends hidden behind such unique natural beauties. Enjoying the point of view of Polignano from the sea is a wonderful experience not to miss :) Also ideal for groups and teams: please send a message if you have a large group. NB: - YOU WILL RECEIVE A MESSAGE WITH CONFIRMATION ABOUT THE STARTING POINT. It depends on the decisions of the local authorities every year, usually based on the season: normally in low season we leave from Cala Paura beach (about 1 km from the center, tour duration about 1 hour), while in medium-high season (May-October) we leave from San Vito beach (about 3 km from the center, tour duration about 1 hour and 30 minutes). Orecchiette&Tradizione
Cooking is part of our family traditions. We prepare and cook typical local dishes. Guests are welcome!! You will be the cooks here, preparing orecchiette, sagne, minchiareddrhi under our instructions. You will be equipped with rolling-pins, a table of course, cooking tools and all the ingredients needed in the preparations of our pasta fresca. We will tell you the origins of the different kinds of flours and we will answer all your questions. Then, Pittule will be in turn!! It’s the typical tasty fried food during our Christmas period. We will show you how a Pasticciotto is prepared and you can taste it!! We will hand you a manual with all the recipes written both in Italian and English. Our guests can take everything they have prepared with them, in order to come back home with a little piece of Salento. Other things to note If you have particular tastes, I advise you to call me beforehand to agree on a different menu to be prepared.

On our farm just outside San Vito dei Normanni, I will introduce you to the world of extra virgin olive oil, introducing you to the 5 oils that the last oil field has donated to me...from the sweetest to the most fruitful I will explain the times and every single variety of olive trees that I have used to create these delights... local wines and selected cheeses will be the backdrop...

Questo pacchetto di degustazione vi porterà tra i nostri vigneti, comodi ed in totale privacy. Un esperto dell’azienda vi racconterà della nostra storia e dedicherà qualche minuto alla spiegazione dei vini e del nostro lavoro, per poi lasciarvi degustare all’aria aperta. Nel vostro cestino da pic-nic troverete due bottiglie di vino a vostra scelta, un boccaccio di peperoni sott’olio alla curcuma con croccante di frisa, patè di verdure, un pacchetto di friselline ed un sacchetto di puccette miste. Insomma, il vero aperitivo salentino. Occhio attento alla sostenibilità: porterete con voi tutti i prodotti che non consumerete durante la degustazione, così da evitare sprechi. Non è finita qui: come ricordo dell’esperienza, vi scatteremo anche una foto istantanea che potrete tenere con voi.
Traditional Puglia cooking class
The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio.
