What you'll do

This will be a full on bread making experience and you will make lots of beautiful bread and go away feeling confident on this fascinating artisan bread making journey.
I will touch on my background and passion for baking. We will talk about different flours, grains and baking styles and traditions.
This is a full on, hands on course learning bread kneads and folds for focaccia, rolls, baguettes, bagels and more.
We will weigh up the flour, yeast and water for the loaves and let them autolyse / prove. You will learn about hydration, salt content, kneading process.
While the main bread is proving we will make some breads for lunch too. You will truly get the feel of an artisan bakery and how it works on a small scale.
We will weigh out and fold the bread for a second prove.
We spend a lot of time on getting you confident in the folding techniques.
We will fold the dough into rolls, baguettes, Baguels and loaf tins for a third prove.
Other things to note
This course can be tailored to novice, intermediate or skilled bakers / chefs / cooks.
It is a fun experience. Using locally sourced ingredients. Just come and get stuck in, talk food, taste food and make amazing bread. You take away a passion for bread, knowledge on flours and folds and I hope with a happy heart and a basket full of bread.

I am a trained artisan baker and chef and daughter of a well-known food writer Tamasin Day-Lewis. I trained as a baker’s apprentice on a wonderful flour mill in Dorset. I learned how to make beautiful artisan bread and patisserie. After cooking for over 25 years around the world, I came back home to Somerset. I set up the cookery school in the heart of a wood burning stove and range cooker showroom on the Somerset Levels. I teach artisan baking, pastry and pasta making, pizza baking or vegetarian food. I can tailor make cookery courses to suit each individual client’s needs. I love sharing knowledge to fellow foodies. Where you'll be

We will be in an open kitchen in the showroom at Sandpits Heating Centre. Surrounded by working Rayburns, Agas and Esse cookers which we will bake on.
Sandpits Heating Centre is one of a kind. It is a family-run business that is more than 50 years old. The family also own Living Pretty tea shop next door and The Firehouse Somerset Pub opposite. You can start with breakfast in our Old Bakery and finish with pizza and a cider after a day Baking!

This was an absolutely amazing experience I learnt loads across bread, cake, tart , curd making etc it was such a fabulous day and carol was so brilliant I would highly recommend the day and will definitely come back again

We had the most amazing day with Miranda and Carol. Baked bread, focaccia (amazing!), bagels (most delicious we’ve ever tasted), two different types of chocolate cake, cookies and macaroons. Our daughters (14 and 11) loved every minute and we were very touched that Miranda went to the trouble of sourcing two different chocolate cake recipes for us to try so that we could have our own family “bake-off”. All this took place in the loveliest surroundings, a working kitchen in Sandpits heating showroom so had a lovely cosy feel and a nice opportunity to try some awesome range coolers! Also learned loads of top baking tips which we can put into practice back home. Staggered home weighed down by all the things we had baked, full and happy. Can’t recommend enough - perfect experience for a family or a group of friends. We will be back. Thanks to Miranda and Carol for a fabulous day.

We booked the bread baking course with Miranda for something a little different to do. Miranda is a wonderful person who makes you feel very welcome and completely at ease. We had a great fun learning how to make bread and buns with her. Miranda also does other courses too which I will not hesitate in booking in the not too distant future.

A wonderful day making Artisan bread. We were novices but due to Miranda’s fun but knowledgeable instruction we feel confident to go home and bake bread!! We would highly recommend this course to anyone who enjoys the taste of real bread!

This was a really wonderful bread making experience. I didn't want a training course, I wanted fun, experimental, interesting and unique and wow, Miranda delivered. I booked this as a birthday gift for my hubby just before Covid. We didn't get to go because lockdown began but Miranda kept in touch and we did the experience for my birthday instead. She's an epic host - so warm, knowledgable and interesting. She showed us 6 or 7 different breads (I lost count) and we came away with a massive bag full of goodies and a new found passion and confidence for baking tasty breads. The show room setting is great too. There are customers walking around, but we felt so immersed in our experience with Miranda we didn't even notice. Lovely setting! This is sooooooooo worth the money, and the pub across the car park is great too!
